Roy Choi spent a few minutes alone before he took the Gastro Magic stage at the 10th anniversary of Outside Lands Music and Arts Festival.Tugging at the black Locol skull cap sitting low above his eyes, the chef leaned against a fence backstage Saturday and gathered his thoughts before headlining his second culinary event of the weekend.Choi, whose Kogi Korean BBQ truck in Los Angeles is credited with starting the food truck craze of 2008, was also the talent behind Friday night’s Feast in the Trees at the San Francisco festival, a $125 per person, multi-course pop-up affair in a wooded grove overlooking the main stage.Over the last year, Choi has made the rounds as he cared for his budding restaurant Locol, the ambitious burger chain he opened with chef Daniel Patterson.The kalbi and kimchi he prepared on the Gastro Magic stage Saturday were core tenants of the menus Korean families would abide by on the weekends when the Southern California weather was fare enough to spend at a park grilling and playing soccer, Choi said.The short ribs were marinated in a mixture of green onions, garlic, onions, roasted sesame seeds, oil, sugar, sweet cooking wine, orange juice and soy sauce before being grilled over high heat and passed out to the audience.Last year’s chef served saffron risotto, seared Ora king salmon and al dente garganelli with a light bolognese.Choi kept the four-course, family-style dinner simple (and personal) with kimchi caprese with watermelon; chili spaghetti; carne asada with corn tortillas served with a side of corn on the cob lathered in mayo, cotija, lime and cayenne; and malasadas with a simple (yet, delectable) butter sauce and vanilla ice cream.After pulling the last short rib from the heat, Choi ended the Gastro Magic demonstration by bringing out a chocolate cake for Del the Funky Homosapien of Oakland’s Hieroglyphics fame.
